Soup Anytime!

Turn most any vegetable into a delicious soup.

Eventually, the cooler weather will be here and soothing foods like soup will sound good.

Making soup does not have to be a big production. It can be done easily by steaming or roasting most any vegetable and then puréeing it in a blender with either stock, water coconut milk, milk, or nut milk. Toss in  some seasonings and herbs and you have a soup that the family will enjoy

Think about broccoli. After it is cooked put it in a blender with the liquid of your choice. Add some seasonings, if you eat cheese that’ll work as well if you don’t and like a cheesy flavor try nutritional yeast. Finish it off with a creamy liquid such as milk or a milk alternative and you have a delicious broccoli cheese soup.

Consider roasting winter squash such as butternut, toss in a blender or Vitamix with some coconut milk, ginger, fresh or powdered, salt, garlic, again fresh or granulated and you have a nourishing bowl of soup.

You can do this with carrots or cauliflower or tomatoes really almost any vegetable will work.

Consider the flavors that you like. Add greens to make it more nutritious such as spinach or kale. Use fresh herbs, and onions. Add basil and garlic to cooked and puréed tomatoes for an easy tomato soup.

If you like rich creamy soups remember add your choice of milk or milk substitutes and always season generously

The cool weather will be here soon enough and a bowl of soup can be ready in no time.
